Santa Monica Granola

After getting off trail (Pacific Crest Trail in 2019), I spent time in Santa Monica with a friend’s family. We devoured this granola and so we requested the recipe. So this is an adaptation I call “Santa Monica Granola”.

Dry Ingredients:

◦ 5 cups oats

◦ 3/4 cup pumpkin seeds

◦ 1/2 cup black sesame seeds

◦ 1/2 cup halved hazelnuts

◦ 1/2 cup walnuts or pecans

Wet ingredients:

◦ 1/2 cup water

◦ 1/3 cup coconut oil

◦ 1/4 cup honey

◦ 1 tsp cinnamon

◦ 1 tsp vanilla

Instructions:

◦ Heat wet ingredients until just come to a boil, pour over dry ingredients and stir.

◦ Line or spray a cookie sheet and spread evenly with a spatula.

◦ Cook at 325 f for 20 minutes, stir. Cook for another 10 minutes. Cook to your liking, some like it more crispy and brown.

Notes:

◦ This recipe is a great budget friendly to stock your granola for a couple weeks to a month, depending on how frequently you eat this crunchy goodness.
