Spiced Apple Oatmeal
An adaptation of the spiced apples from Reset to Resilience have become a staple base for a refreshed perspective on a regular weekly breakfast.
Ingredients:
◦ 1/2 cup water
◦ 3 cloves
◦ 1 in. piece of ginger
◦ 1 chopped apple
◦ 1/2 cup old fashioned oats
◦ Sprinkle of cinnamon
◦ 1 tbs chia seeds
◦ Toppings of choice
Instructions:
◦ Bring water to a boil with cloves and slices of ginger
◦ Once water is bubbling, lower to medium and add chopped apple with cinnamon and cover for 10 minutes
◦ Add in oats, 1 tablespoon chia seeds and water if needed until oats are soft.
◦ Top with “Santa Monica granola” or toppings of choice (I like thawed frozen berries, pumpkin seeds, shredded coconut, and Greek yogurt)
Notes:
◦ This recipe comfortably serves 2 and is deceptively filling.
